Mushroom sauce (GF, PF, SF, NF)

1 Shallot (small onion)
4 Cloves Garlic
300gm Swiss Brown Mushrooms
2Tbs parsley
1tsp Thyme
2 Tbs Butter & Splash Olive Oil
2TBs white wine
400mls full fat cream  

Dice onion & garlic.
Thinly slice mushrooms.
In hot frypan, add butter & Oil. Melt.
Add garlic & shallot.
Cook for 30 seconds. 
Add mushrooms to hot frypan. Stir for 7 minutes.
Do not add any further liquids.
Add salt & 2TBs white wine. Cook for 1 minute.
Stir and flip over the mushrooms a few times.
Add parsley & thyme.. 
Add cream.
Bring to boil.
Simmer for 15 minutes or until the sauce is nice and thick, stirring frequently.
Then turn pan to medium heat.
Reduce sauce until nice and rich.
Add more salt and some pepper.
