Gluten-free Waffles (GF, DF, SF)

1 1/2 cups rice milk or soy milk 
2 eggs - Separate egg white from yolk; whip whites with a pinch of cream of tartar until very stiff 
5/6 cup white rice flour
1/2 cup coconut flour
1/2 cup tapioca flour
2 tsp guar gum
2 tsp baking powder (gluten free)
2 packets of stevia
1 tbsp safflower oil 
Mix all dry ingredients together in a bowl to ensure that the guar gum is thoroughly mixed.  
Mix egg yolks and milk together. Add flour mixture. Fold in egg whites (using mixer). Batter should be medium thickness � spreads only slightly when poured on to hot waffle iron 
Use 1/2 cup of batter per waffle 
Cook in waffle iron (hot) for 7 minutes or until brown 
* arrowroot flour can be used instead of tapioca flour
**This recipe doubles and triples well
