Pancakes (GF, PF, SF)

2 eggs
1/2 cup cottage cheese
1/2 cup oatmeal
1/2 tsp baking powder
1 tsp vanilla
cinnamon to taste 
Add all ingredients into a blender. Blend until oatmeal is pulverized. (1 min) 
Cook in hot pan (setting 6) in 1 tsp of coconut oil. Flip over when edges are bubbling. 
**If eggs are x-large, add a little more oatmeal for good consistency.
