Biscottis (Almond flour, GF)
|Preheat oven to 325 degrees F. Coat both a large cookie sheet and a square glass cake pan with oil. Spray both with cooking oil. Line the cookie sheet with parchment paper, and cover the bottom of the glass cake pan with parchment paper.|

|2 tbsps lemon / orange juice
1/2 cup butter (room temperature)
1/2 cup maple syrup
2 large eggs
1 tsp vanilla
Zest from 1 lemon or orange
1/2 cup pumpkin seeds
1/2 cup chopped cherries, chopped cranberries, dates (as desired for flavour)

|2 1/2 cups almond flour plus 1/2 cup for kneading
1/2 tsp guar gum
1 tbsp baking powder
1/4 tsp salt
|Mix the dry ingredients.
Add prepared ingredients to food processor bowl and mix.
|Place dough in glass pan.
Bake for 30 minutes.
Cut into biscotti strips, place strips on the cookie sheet on edges.
Cook for an additional 20 minutes.
