Biscottis (Almond flour, GF)

Preheat oven to 325 degrees F. Coat both a large cookie sheet and a square glass cake pan with oil. Spray both with cooking oil. Line the cookie sheet with parchment paper, and cover the bottom of the glass cake pan with parchment paper. 
Prepare in advance ... 
2 tbsps lemon / orange juice
1/2 cup butter (room temperature)
1/2 cup maple syrup
2 large eggs
1 tsp vanilla
Zest from 1 lemon or orange
1/2 cup pumpkin seeds
1/2 cup chopped cherries, chopped cranberries, dates (as desired for flavour) 
Add dry ingredients to food processor bowl ...  
2 1/2 cups almond flour
1/2 cup tapioca flour
1/2 tsp guar gum
1 tbsp baking powder
1/4 tsp salt
Mix the dry ingredients.
Add prepared ingredients to food processor bowl and mix. 
Place dough in glass pan.
Bake for 30 minutes.
Cut into biscotti strips, place strips on the cookie sheet on edges.
Cook for an additional 20 minutes.
