Apple crumble (GF, PF, DF, V)

Preheat oven to 375 degrees.
Grease an 8 x 8 inch pan.
For the Apple Filling:
about 6 or 7 peeled and chopped baking apples
1 tbsp (15 ml) tapioca flour
1/2 cup (75 ml) sugar
1 tsp (5 ml) cinnamon
1 tbsp (15 ml) fresh lemon juice

For the Topping:
1 cup (250 ml) gluton-free rolled oats
1 cup (75 ml) almond flour
1/4 cup maple syrup
1/4 cup coconut oil, melted 
1 tsp (5 ml) cinnamon
1/4 tsp (1 ml) sea salt
Make the Apple Filling:
Place apples in large bowl, sprinkle tapioca powder on top.
Toss until combined
Stir in the sugar and cinnamon
Add lemon juice and stir
Pour mixture into pan and smooth evenly

Make Topping:
In large bowl, stir together oats, almonds, almond flour,
    maple syrup, melted coconut oil, cinnamon,and salt
Sprinkle the oat mixture over apple mixture

Bake:
Cover pan with foil, poke holes
Bake for 40 minutes
Uncover the pan and bake for 12 minutes more
